fruits of our labor (or labor for our fruit)

dear internet,

two summers ago, abby planted a couple of squat, little blackberry plants that we picked up at lowes and we crossed our fingers. we've consistently ignored them - never watered them and have yet to fertilize. this year, the two plants have reached 7 feet in height, need to be secured with industrial gardening wire and have more fruit than I know what to do with. I think they'll be in full swing by the second week of august and need a plan. here's where you come in - what on earth am I going to do with an absurd amount of blackberries??

PS - who/what is eating the leaves and should we be concerned? I thought the birds would have a field day with these berries but they don't seem to be interested.
